Country Bean Soup


Recipe Description
This is a yummy bean soup that goes well with cornbread or garlic bread (my fave)! The combo of spices really makes it special.​
Preparation Steps:
Rinse beans, soak overnight, and rinse again. Chop your ham or slice your sausage.​
Level of Difficulty:
Easy​
Time Needed:
8-10 hrs.​
Ingredients:
1 bag of 15-bean soup mix beans (rinsed, soaked overnight, and rinsed again)
3/4 lb. of ham, cut into small pieces (or sliced smoked sausage)
1/2 c. chopped onion (I use frozen)
1 tsp. oregano
1 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. basil
1/4 tsp. cumin
1/2 tsp. pepper
6 cups water

2 cups skim milk and 2 T. butter​
Serves:
Directions:
Add all ingredients (except milk and butter) to your slow cooker, cover, and cook for 8-10 hrs. If using sausage, add towards the end of cooking to prevent it from becoming mushy.

Shortly before eating, add the following:

2 cups skim milk
2 T. butter

Stir until the mixture is heated through and the butter is melted. Season with additional salt and pepper to taste.

(I don't add the milk and butter, but this is just a personal preference.)​

I don't know how I missed this, but thanks! I love bean soup, and always wanted to try one with 15 bean variety pkge. Sounds yummy!
