Crunchy Onion Rings

2 T. flour
1/4 t. salt
1/3 cup plain dried bread crumbs
1/4 cup eggbeaters
2 sweet onions, peeled, cut into 1/4 inch slices and separated into double rings

1. Place oven rack on the top rung of the oven. Preheat oven to 400. Spray a nonstick baking sheet with nonstick spray.
2. On a sheet of waxed paper, combine the flour and salt. Place bread crumbs on another sheet of waxed paper. Place eggbeaters in a shallow dish.
3. Coat each onion ring on both sides with flour, shaking off the excess. Dip the ring into the eggbeaters and then coat with breadcrumbs. Arrange the rings on a baking sheet and lightly spray the tops with nonstick spray. Discard the excess of the dipping items.
4. Bake on the top rung until browned, about 10 minutes. Turn the rings carefully and bake until browned on second side, about 5 mins. Serve at once.
