Cucumber/Cream Cheese "Salad"

Recipe Description
I got this one from the website Lunch in a Box.

I can't get over how quick, easy, and inexpensive this dish is. And tasty. Like awesome tasty.​
Preparation Steps:
Use a mandoline to slice the cucumber very thin - as thin as you can (please refrain from adding blood to the dish!). This CAN be made with a knife, but unless you have amazing knife skills, the texture isn't as awesome. Still good. Just not awesome.​

5 minutes prep, 10 minutes or so "resting time"​
Black pepper
3 to 4 inches of an English cucumber (or a "regular" cucumber with the seeds scooped out - not worth it, IMHO, so use the English variety)
1 to 2 ounces of cream cheese​

1. Slice your cucumber and put it in a colander/strainer (I use a strainer) and put that over a bowl. Use copious amounts of salt to cover. COPIOUS amounts. You're trying to draw the water out so that it doesn't go all *yuck* before lunch. You can't use too much salt but you can use too little. This will get rinsed off so use "tons". Now, walk off for several minutes. The original recipe creator says at least one minute, but I've left it for much longer than that - I usually go take a shower or fix the rest of my lunch. 2. Come back and rinse off your cucumber. Try to get as much salt off as possible without being obsessive.

3. Wring out the cucumber. I usually use my hands and then wring it off/pat it dry using a napkin or five. Put the cucumber in a clean bowl.

4. Microwave the cream cheese until soft. This can be between ten and twenty seconds.

5. Mix cream cheese and cucumber.

6. Add black pepper to taste.

7. Enjoy!​

Sounds yummy! I don't have any cream cheese, but I do have a pound of soft goat cheese. Can't wait to try it, thanks for sharing.
