Curried Squash Soup
Recipe Description
A copy of a soup we had in a restaurant. Amounts are inexact and the amount I just made was for 2 adult main course (1 bowl each) servings. Adjust to your own taste & family! Amounts are approximate.

Cut the squash in 1/4s, remove seeds/strings
Cook squash in microwave and let cool (can be done in ahead)

Ingredients:1 med buttercup squash, cooked
2C apple cider (don't use sweetened juice!)
1/2C water or chicken broth
1/2 lg onion
1-4T curry powder to taste
(next ingredients are optional)
lemon pepper
salt/pepper
minced celery (about 1/2 stalk)
chopped apples (in soup or as garnish)
yogurt (garnish)
Serves:2C apple cider (don't use sweetened juice!)

2 adult entrees 1.25C
Directions:Put approx 1/8C cider or water in soup pan big enough for all of the soup (about 1" deep). Add chopped onion. Cook until onion is transluscent. Add 1T curry powder. Cut cooked squash into chunks and add to pan. Add cider to cover squash and heat throughly. Taste. Add more curry powder, water, stock, or lemon pepper if needed. Buzz with stick blender. Serve w/chopped apple or yogurt or curry powder as garnish.
