OK, so it's not exactly frugal, but we all need a treat every now and then. And if you happen to grow your own dill (I don't), it would certainly be more frugal. Dill is expensive! This isn't a "serve the family" recipe but more like a lunch type of food. Or maybe if you're having a friend over for lunch. It's really good, tho'.

1 12.5 oz can chicken breast, drained
1/4 cup walnut pieces
1/4 cup sweetened dried cranberries
1/4 cup sliced green onion
1 Tsp. diced red onion
2 Tsp. chopped fresh dill

Mix all together. Original recipe says to serve on Arugula leaves or mixed greens or on Focaccia rolls. Me? I just eat it. Plain. On whatever crackers I have. Bread. Whatever is handy.

Also, when I don't want to buy a whole red onion, etc., I've been known to just buy dibs and dabs of the produce parts from the salad bar at the store.
