Easy Chunky Spaghetti Sauce


Recipe Description
Not 100% from scratch, but fast and awfully good.​
Preparation Steps:
Wash and chop bell pepper and onion.​
Level of Difficulty:
Easy​
Time Needed:
15-20 minutes​
Ingredients:
1 26.5 oz. can/jar of spaghetti sauce, your choice (I like Hunt's in the can, traditional or green pepper/mushroom flavor)

1 6.5 oz. can of mushroom pieces and stems, drained

1 can petite diced tomatoes, do not drain

1/2 small green bell pepper, chopped

1/2 c. chopped onion

minced garlic (I use about 2 tbsp., but go by your own taste)

1/2 tsp. basil

1/2 tsp. oregano

1/2 tsp sugar

sprinkle of red pepper flakes (may omit)​
Serves:
About 6​
Directions:
Stir together all ingredients in a medium sauce pot and simmer covered on medium heat until your vegetable seasonings are tender. Taste to adjust spices -- I like to add a little extra basil. If you choose to add meat, simmer it a while in the sauce to add flavor and tenderize it.​

I buy jars of pasta sauce when they are on sale. I add my homemade ratatouille to it. I always have some "rat" in the freezer! (Zuch and/or summer squash, onions, diced tomatoes, eggplant, garlic. Chop all up and put all in pot. Cook til done. Easy and tasty. I make huge pots of it in summer when these veggies are cheap.)
