I found this recipe on the Mr. Cooking site some time ago. It is now a favorite recipe of mine for banana's that are too ripe but not bad enough to through a way. The recipe says optional for the walnuts but they make it company special. It is so easy and quick to may this from scratch. Soooo good toasted in the morning. If you don't have 3 banana's use two and add 1/2 teaspoon banana flavoring.

Easy Banana Bread :fdance:

1 and 1/4 cups flour
2 eggs
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
3 bananas
8 Tablespoons margarine
1/3 cup walnuts (optional)

Cream sugar and margarine, mash the bananas with a fork and add to the mixture. Beat and add the eggs. Slowly add the flour, salt, and baking soda. Pour into a loaf pan. Bake at 350F for 30-45 minutes.

Serves 6
