1 lb mild chunk cheese, such as mozzarella, mild cheddar, or colby jack
Oil such as olive oil or canola
Dry seasoning mixes like ranch dressing, Italian dressing, taco seasoning, etc
Cut cheese into 1" cubes. Drizzle a little oil over, then toss to lightly coat every side of each cube. Sprinkle with about 1 tbsp of seasoning mix, toss to evenly coat cubes. Use more or less seasoning to taste. Cover and chill at least 2 hrs. Serve.
Notes: This is an extremely versatile recipe, so feel free to experiment. It's also easy to scale to any amount, just use more or less of each ingredient to suit your needs. I made my latest batch by omitting the oil and tossing the cheese with Buffalo wing sauce, and it turned out great! Try meat rub blends, or any other flavors you like.

-wing sauce (oil omitted)
-taco seasoning
-Cajun seasoning
-fiesta dip seasoning
-garlic and dill
-zesty Italian dressing mix
All have been delicious.
