Egg Drop Soup

Ingredients:3 cups vegetable broth
1/2 teaspoon salt
2 tablespoons cold water
1 tablespoon cornstarch
1 egg (slightly beaten)
1 scallion, with tops, finely chopped
Serves:1/2 teaspoon salt

Directions:Bring vegetable broth to a boil in soup pot.
Add 1/2 teaspoon salt & stir.
Combine water and cornstarch. Stir into broth.
Lightly beat egg in a bowl and add a small amount of hot broth, stir slowly a few times. Add egg mixture into hot broth slowly, stirring slowly but constantly until egg is cooked.
Garnish with scallion.
