The first thing that came to mind is HOMEMADE FUDGE!!!

Anyway, you can use it in mashed potatoes, meatballs, meatloaf, just about anything you put milk in. You just have to adjust it because it's more concentrated than the milk we drink.

The all day crock pot mac & cheese recipe I found online uses one can of evaporated milk in it. I have also heard of fudge recipes calling for it.

Tee hee! I know it's just part of your signature, but the invitation to weightlossmoms might become relevant. The only thing wrong with using the stuff full strength (and a lot of things come out wonderfully good if you do) is the fact that it adds calories. I use it on cereal, which I don't eat frequently, and in baking. I'm sure it would be great in mashed potatoes, or to make cream soups with. I do NOT like it in coffee, or to drink. It will keep for a very long time.

You can mix it half and half with water and use it for cooking. You can not tell the difference. You can also drink it, although it is a little different from milk when I was growing up that is all we had for cereal and such.
