The only thing wrong with using the stuff full strength (and a lot of things come out wonderfully good if you do) is the fact that it adds calories. I use it on cereal, which I don't eat frequently, and in baking. I'm sure it would be great in mashed potatoes, or to make cream soups with. I do NOT like it in coffee, or to drink. It will keep for a very long time.
