EZ Cheesy Potatoes


Recipe Description
A quick throw-together dish made with stuff you have on-hand. This recipe makes a huge batch so it's a perfect OAMC side dish. You can divide into two smaller pans and bake one now and use one later.
This dish is our family's favorite side dish to serve with ham.​

Ingredients:
2 pkg. (16 oz) frozen southern style hashbrozen, thawed
1 container (24 oz) French onion chip dip
2 cans (10.75) cream soup
1 soup can milk
1 pkg (16 oz) shredded cheese (your choice), more if desired
Salt and pepper
Garlic powder​

Directions:
Mix hashbrowns, soup, milk and chip dip. Add 1/2 of cheese to mixture. Season with salt, pepper and garlic powder to taste. Spray 9x13 baking pan with non-stick spray. Pour in potato mixture. Cover and bake at 350F for approx. 45 minutes or till bubbly and hot. Remove foil and top with remaining cheese. Return to oven and bake till cheese is melty and bubbly.
NOTE: The original recipe called for regular shredded hashbrowns but I like the chunky-type potatoes better. You can substitute sour cream and chopped onions for the chip dip too. I stumbled upon using the chip dip when I had some in the refrigerator that had to be used up and I used it instead. I just found out that you could use whatever you had in the refrigerator. You can use cream of potato, cream of celery, cream of mushroom or cream of chicken, however, it will affect the taste so experiment with what your family likes.​

Sounds yummy! The only ingredient I don't have at home is hashbrowns. I'll have to remember that next time I see a good deal on them.

I seldom buy frozen hashbrown potatoes. I usually have fresh potatoes and what I do is peel and cook them in the microwave, then cut up in small cubes and use them in recipes calling for hashbrowns. My sister likes them even better when I do them that way.

I made this tonight for the first time for our Sunday family meal, and everyone really liked the change from my regular cheesy potato recipe. I enjoyed how easy it was to put together, as I was in a time crunch.

This will definitely be made again. Thanks for sharing!
