Fast and Frugal Fried Rice


Recipe Description
A no special ingredients needed way to get a fast food fix at home. I keep cooked rice and diced cooked meat in the freezer to make this easy meal super fast to make.
You can use reduced sodium soy sauce and substitute canola oil for the grease to make this healthier but the taste is very different.​
Preparation Steps:
Chop your veggies and defrost any prepped items from your freezer.​

Time Needed:
30 minutes​
Ingredients:
3 TB bacon grease
1 medium onion, diced(about 1.25 cups)
2 medium carrots, diced(about 1.25 cups)
1/2 cup peas
1/2 cup diced mushrooms(optional)
1 cup diced cooked pork, chicken or shrimp
4-6 TB soy sauce
3 cups cooked rice​

Directions:
In a large fry pan over medium heat saute diced carrots and onions in the grease until tender and slightly browned, about 15 minutes. Stir in meat, peas, and mushrooms and cook till heated through. Add soy sauce and mix in completely. Add rice and stir to coat. Heat through and serve.

Mahalo - love fried rice. I add a touch of sesame oil before serving - love that taste essence!!

sesame oil or the spicy red hot chile oil...yum...thanks for the idea! may have to make this sooner than later...
