Fast Caramel Corn
Recipe Description
I got this recipe from Taste of Home magazine. I can make a batch in less than 10 minutes and everyone loves it! 4 ingredients and no baking which makes it a great summer dessert or quick gift.
Preparation Steps:Air pop the popcorn, measure and transfer to a large bowl to weed out the unpopped kernals. Mix in the nuts if using. Lightly grease a large cookie sheet.

Time Needed:10 minutes
Ingredients:1/2 cup popcorn kernals, popped and measured to 12 cups(3 quarts)
1/2 cup sugar
1 stick(1/2 cup) butter
1/4 cup light corn syrup(I use Aldi's with vanilla)
1/2-1 cup of almonds, walnuts or peanuts, optional
Serves:1/2 cup sugar

Directions:Melt butter, sugar and corn syrup together in saucepan over medium high heat until it comes to a foaming boil. Start a timer for 5 minutes and continue boiling, stirring occasionally. Pour over popcorn in bowl and mix as quickly as you can to coat pieces. Spread corn out on greased cookie sheet to cool for an hour before placing in airtight containers. Makes 14-16 cups(depending on nuts).
