Glazed Salmon
Recipe Description
An easy fish dish - pretty fast, too!
Preparation Steps:Preheat oven to 400 degrees Farenheit.
Spray an 8x8 baking dish with cooking spray, I use a glass cake/casserole pan.
In a small bowl, mix together the mustard and brown sugar until smooth.

Ingredients:1/3 cup dijon style mustard
1/3 cup packed brown sugar
1# salmon filet (skin on is fine)
cooking spray

Directions:Place salmon in the dish, skin side down (I can never find skinless, but the skin doesn't bother me.)
Pour glaze over top - it will run down, leaving a coating on the fish.
Pop in the oven for 20-25 minutes. Check for doneness with a fork or tip of a knife. Fish should be flaky. To serve, cut filet across grain with smaller spatula, then tilt spatula to "scrape" flesh from skin. Top the fish with the cooked caramelly sauce - so good!
