Ham and Bean Soup

Recipe Description
Quick ham and bean soup.
Preparation Steps:
I have made this with both regular ham and turkey ham - I actually like the turkey ham better.
Be sure to use the LOW SODIUM chicken broth. Otherwise, it will be too salty.
Level of Difficulty:
Easy
Time Needed:
30 minutes
Ingredients:
2 tablespoons cooking oil
1/2 cup chopped onion
1 chopped carrot
1 cup chopped or diced ham
4 can Great Northern beans
1 can low-sodium chicken broth
1/2 to1 teaspoon dried red pepper flakes
Serves:
Directions:
Heat oil in stock pot or dutch oven.
Saute onion and carrot for about 5 minutes.
Add ham and cook additional 5 minutes.
Add one can of Great Northern beans and mash with potato masher. (This thickens the soup)
Add remaining 3 cans of beans, chicken broth, and pepper flakes.
Cook until heated through.
