Healthy Meatballs with Marinara Sauce
(Turkey, Beef and Bean Meatballs)

Beans with give you fiber, reduce the calories and
also stretch this dish - making it also cheaper
you will not taste the beans

Meatball ingredients list:
1 lb of ground turkey
1 lb of lower fat ground beef
2 cans of beans drained - any type of inexpensive canned beans (butterbeans, black beans, red beans, field peas, etc) - you will not taste them).
1/4 cup of Catsup (preferably low sugar but you can use regular catsup)
1 large beaten egg (or 2 small eggs)
1/2 cup of Grated Italian Cheese (Low Fat inexpensive brand bottled type)
1/4 cup of Quick Oats (oatmeal)

1 tsp salt and pepper each
2 tbsp dried oregano
1 tsp of dried pepper flakes - chopped with a knife (will not make it hot)

1 medium onion chopped fine
1 medium green bell pepper chopped fine (optional)
2 cloves of garlic chopped fine (more if you like)

Sauce ingredients list:
2 bottles or cans of Marinara Sauce - look for lower fat, inexpensive brand
- 2 tbsp dried oegano,
- 1/2 cup of grated Italian cheese (Low Fat inexpensive brand bottled type)
Meatball Directions:
- preheat oven to 400 degrees
- mash up beans with a potato masher or fork (or toss in blender)
- blend all MEAT ingredients together in a large bowl. Using your hands is easier

- Put about 2 tbsp of meat mixture in a small skillet (or microwave) and cook until done FOR YOU TO TASTE so you can correct seasonings. Add more salt, oregano or red pepper flakes to suit your taste.

- After you have corrected seasonings, form meatballs in the size you like. I use about 2 Tbsp of meat per meatball. Make them a size that your friends can eat in one or two bites.
- Place meatballs on a sheet pan sprayed with veggie spray
- Bake in oven until done - depending on the size meatball you made. 10 to 15 min.
- Check and/or taste one meatball after 10 min - - do not overcook. Pour off and discard any fat drippings.

Note: Meatballs will be sitting in hot marinara sauce and will continue to cook - so do not overcook in oven
Sauce directions:
- Pour Marinara sauce in veggie sprayed and heated crockpot. Add and then mix well
2 tbsp of dried oregano
1/4 cup of grated Italian cheese (Low Fat inexpensive bottled type)

- Add meatballs and cover.

- Serve with a large spoon sitting on a saucer by the crockpot
- Place a dish of tooth picks (wooden or fancy) by the crock pot with also an empty dish on the other side of the crockpot for your friends to discard their toothpicks in.

Note: you can buy the inexpensive and off brands for all ingredients - I have tried both and the cheaper versions are just as good for this dish.
