This takes about 30 minutes from start to finish. It's a healthy meal if you have healthy leftovers.

Preheat oven at 350 degrees.

Start with taking all of your leftovers out and put them into a big bowl.
Make sure to dice all pieces of meat and vegetables. You can use pretty much anything; I have put in spaghetti, veal parmesan, sausage, bacon, a brie sauce I messed up, cottage cheese, and so much more. Try to stay away from bread like foods. They will soak up to much liquid and won't bake well.

Add bread flour equal to 3/4 of your leftovers.
Fold in a few times.

Add 3 large eggs, if you have more than a pound of leftovers add two more eggs.
Mix with a fork thoroughly. The batter should be smooth and moderately thick.

Add 1/8 of your batter mass worth of canola oil. Basically, to smooth out the batter and lessen the thickness, also keeps it from sticking.
Mix very well.

Cheese is great with these but not necessary.

Grease muffin tin, use a light oil.
Fill cups 1/2 full.
Bake for 10 to 15 minutes.
Serve with Sour Cream Sauce.

Sour Cream Sauce
Medium container of sour cream, hot sauce to taste, chopped onion, garlic, salt.
Mix well. Chill until muffins are done.
