I have 3 1/2 gallons of refrigerated almond milk that expire on 3/2/11. I don't want to waste them. What can I do with them? Anyone know how long one will keep if it's still sealed?

I use almond and/or soy milk in smoothies. If you have some fruit around, you can blend the milk and fruit together, then pour into individual containers and freeze. It will last quite a while in the freezer, and tastes just fine, in smoothie form, so I suspect it would taste fine plain.

Silk Soy says that it doesn't freeze well, but I've frozen it and it comes out fine, so if you can't come up with any ideas, I'd freeze it and find out. Consider it an experiment. Better than just tossing it.

It should freeze okay and I bet it would be fine a little after the expired date. I use mine with cereal and smoothies also.

I have used mine up to a week past the expiration date and it's fine. I can't say exactly how long it may be okay up to because it's rare that it lasts that long at my house.
I have frozen it with success.

Freeze some of it in ice cube trays and then put it in a plastic bag in the freezer. Then if you only need a small amount it's easy to just take out what you need. Or freeze it in two-cup containers or whatever is a good size for your needs.

Thanks everyone! I have a bunch of frozen fruit so I will make a bunch of smoothies and refreeze them. I will also try freezing it to see how that works!

I will let you all know how it goes!
