Help me make dinners!

Here is my pantry inventory. There is not much. I also have NO meat at all. I used the last of it for tonights dinner. I have only a few dollars left in cash. If it comes down to it, I will cash my change jar in for groceries.

1 Huge Can of Cream of Chicken soup with wild rice
4 boxes of varied pasta
1 box of jumbo pasta shells
several bottles of different salad dressings and marinades
1 jar of salsa verde
3 jars of pasta sauce
mayo
1 can of cajun style red beans
1 can of minestrone soup
1 can of tomato paste
several bottles of BBQ sauce
1 can diced jalapenos
3 jars of Peanut butter
1/2 a bag of rice
plain couscous
rissoto
1/2 bag of tortilla chips
flour, sugar, cornstarch, baking soda, etc.

I also have some lipton rice sides and pasta sides all different flavors

In the freezer/fridge I have mozzarella cheese, cheddar cheese, milk, eggs, and tons of bread.

Any suggestions?

Do you have any fruits and veggies?


Jumbo pasta shells cooked and cooled a little then filled with mixture of mozz cheese one egg and milk. Served with pasta sauce topped w more mozz cheese. Then make some bread w butter spread and garlic salt.


Make box of past noodles and rinse and cool. Add cut up cheddar cheese and any veggies if you have them...toss with dressing (italian if you have it, but french will work)


Rice with salsa verde on top on crushed up tortilla chips and cheddar cheese on top.

Do you have any fruits and veggies?
I have broccoli which is for tonight, and a big bag of potatoes. Also some onions and green peppers.

And I have bananas, 2 apples, some oranges and grapes.

Mostly the fruit is for DS to eat with breakfast and lunch.
How about breakfast for dinner--cheese omletes or french toast and fried potatos.

Rice and beans, or any of the pasta and sauce, toasted cheese sandwiches,
banana and peanutbutter sandwiches (sounds strange but is very good)--baked french toast with apple.

Cube up several slices of bread put in a greased casserole dish, beat some eggs and milk together, pour over bread, season with salt, pepper and garlic salt if you have it, top with grated cheese and bake at 350* for 30 to 45 minutes until its set. Add what ever veggies or a can of tuna or bacon bits you might have.
You can make macaroni & cheese
Need:
2 c. Milk
1/4c. Flour
2 tbsp. Butter/margarine
2 tbsp. Chopped Onion
1/2 tsp. Dry Mustard Powder
1 c. Sharp Cheddar (grated)
2-3 c. Macaroni
Bread Crumbs
Melted Butter

Directions:
Melt butter in saucepan. Add onions, cook until soft (not brown). Add flour & mustard, and a bit of pepper. Stir to form paste. Gradually add milk, stirring constantly. Keep stirring on low until sauce thickens. Add grated cheese. Add sauce & cooked macaroni to casserole dish and mix well. Top with buttered bread crumbs.
Bake 350º about 1/2 hour.

You could put the tortilla chips on a plate and top them with the beans, jalapeño and cheese and bake them in the oven, then dip in the salsa.

Cook some potatoes in the microwave until they are soft, then slice them up and fry them with some onion. You could have eggs with them, although I've had times where the potatoes were the whole meal.

You can make fresh biscuits and eat them with the canned soup (people seem to mind the canned soup less if it comes with fresh baked goods).

Everybody else took my dinner suggestions LOL but for dessert you can make peanut butter cookies.
These are some great ideas, thanks!
Here's one more: layer tortilla chips, jalepenos, green sauce, chedder & mozz. cheeses, broil a little.

Yummy with a cold beer!
Stretch your minnestrone soup with extra pasta, which will also make it more substantial for a meal.

If you can afford a bag of dry beans, you could cook them with some of the pasta sauce for flavor, maybe add a little sauteed onion and pepper, or some of your spicier salsas. They'll go a long way.

Baked potatoes topped with cheese and sauteed onion.

Chop boiled eggs into a cream sauce -- you can add cheese if you like, and any other seasonings -- and serve on toast.
Here's a few:

*Egg salad sandwiches and soup
*Cheese pizza
*Baked pasta and sauce with shredded mozzarella on top
*Baked potatoes topped with cream of chicken soup and mozzarella cheese



Here's a really easy p-nut butter cookie recipe:

The Big 3

1 cup peanut butter (preferably crunchy)
1 large egg
1 cup sugar

Mix ingredients. Roll into balls and place on cookie sheet. Flatten with fork dipped in sugar. Bake at 375 for about 12 minutes.

Thought of a few more.....

*Homemade pancakes, waffles or French toast. Serve with warm syrup and eggs
*Soup and grilled cheese
*Vegetarian Chili -- add water or beef bouillon to pasta sauce, add beans. Serve with tortilla chips over rice
*Homemade cheesy garlic bread -- toast stale hamburger or hotdog buns, slather with garlic butter and top with mozzarella cheese. Place in broiler till cheese melts. You can serve this a main dish of pasta and sauce or beans and rice. Can even serve this as a light meal/lunch with a side of pasta sauce
*Tomato gravy over rice and potatoes (a southern specialty). I don't have a recipe handy, but you can find one on www.community.southernliving.com

I made this for dinner to night and it was yummy! I chopped up a couple of hot dogs I had and added them before baking. Thanks so much for the recipe, I will definitely be making this again!

Its one of our favorites
There's a bread casserole in Diet for a Small Planet, I think. It's basically a savory, rather than a sweet bread pudding: milk, eggs, bread, onion, celery, salt & pepper, if I remember correctly. I'll look and if I can find the recipe, I'll post it here.

I have Diet for a Small Planet, it may be in the Recipes for a Small Planet. But I did find something similar online at recipesource.

STALE BREAD CASSEROLE

Recipe By :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 loaf stale bread -- crusts removed
1/2 lb. sliced American cheese
1 1/4 c. evaporated milk
1 1/4 c. water
4 eggs -- beaten
1/2 tsp. dry mustard
2 tbsp. minced onion
Salt and pepper -- to taste

Slice bread in 12 slices. Arrange 6 slices in a large greased
baking pan. Cover with all of the cheese and the rest of the bread.
Blend milk, water, eggs, mustard, onion and seasonings. Pour over
bread and let stand at least 1 hour. Bake in a 325 degree oven for
45 to 50 minutes or until puffy and brown.
