Help! My leftover spiral ham situation is spiraling out of control. Does anyone have any good recipes using leftover spiral ham?

I have the same issue.
I made om;ettes yesterday, ham sandwiches for the kids today for lunch and will make fried rice tonight with some cut up in it.

This is what I do with ham and my family likes it. I buy 2 boxes of our favorite scalloped potatoes, throw in some chopped ham slightly decreasing the amount of water that the box calls for. I throw it in the oven and there you have it.

Quick easy and cheap.

P.S. I don't dirty any extra bowls I mix everthing in the 9x13 in. pan that I bake it in.
