Homemade Chicken Salad

Recipe Description
This is such an easy recipe as well as being healthy and quick for work or school lunches. Its great with crackers or with loaf bread.​
Preparation Steps:
You will need a large pot to cook the chicken in and a food processor to chop the chicken up finely.​

1 hour​
5 or 6 whole chicken legs
1 cup mayonnaise
3/4-1 cup pickle relish
1 medium finely chopped onion
1/2 cup broth from cooked chicken
Salt and pepper to taste​
First skin the chicken. Place in a large pot of water and boil until no longer pink and cooked through. Remove from stove and cool. For quicker cooling I take the chicken out of the pot and place in a bowl and refrigerate for about 30 minutes. Save the broth from the cooked chicken.

After chicken is cooled enough tear all the chicken off the do not want any fat, skin, or bone.

Now place the chicken into your food processor and use the smallest grater blade. You want to chop the chicken up finely. When all is chopped place into a big bowl and add the rest of the ingredients stirring up really well. Add more or less mayo as needed. Then put a lid on the bowl and refrigerate at least 12 hours before serving.

***to make it a less fattening dish use chicken breast and use fat free mayonnaise.​
