I don't make macaroni salad often because my family just isn't fond of it. When I do, I use italian salad dressing, some chopped red peppers, olives, and celery. Sometimes I add chopped hard boiled egg too.
My favorite potato salad is the recipe on the back of Hellman's mayo. YUM!
I add hard boiled egg to both my mac salad and pot. salad...... That is odd i guess..... My mother made it that way, but I never see mac salad in stores or gatherings made that way...
Pot or small mac
a bit of mustard
sweet pickle juice (just a little,
ground celery seed.
salt and pepper.
finely diced celery and onion...
I like finely diced pimentos or tomatoes, but dh doesn't ....
I add to potatos....mayo, mustard, dash seasoning salt,ranch dressing, onion, eggs, pickles...sometimes bacon, celery, & relish. ...then I thin it with a little milk.
sometimes I do the macaroni salad the same way, with eggs,bacon, relish,and celery. then add some ranch dressing to the mayo, mustard and milk.
Here's the way my family does it.
1 lb. elbows ,cooked &drained
Sweet pickles, sliced
1 can tuna, drained
mayo,salt& pepper to taste.
2lb red potatoes, cubed,cooked & cooled
4 hard boiled eggs,chopped
couple sweet pickles, sliced
2 grn onion, sliced
1/4 c.miracle whip
1/2 tsp. salt
1/8 tsp. pepper
mayo,mustard s&p to taste.
Roasted potato salad
4 slices bacon, cooked. reserve some grease
2lbs potatoes,cube & lightly coat with some bacon grease. Roast in 9x 13pan or cookie sheet at 425 for 30 min or until golden. Sprinkle lightly with salt.cool.
mix together & add~
2/3 c. mayo
1/3 c. sour cream
1T Dijon mustard
2 green onions,sliced thin
3 hard boiled eggs chopped
s&p to taste
