So I made the Chicken Enchiladas. I couldn't find a recipe online that I liked so I improvised. Enchilada sauce is kind of expensive, but I found a powdered mix with the taco mixes and stuff which was cheaper so I did that.

I took some shredded chicken, black olives, and some onions I cut up and mixed it with half the sauce. In the crockpot I layered corn tortillas, the chicken mix, more sauce and then shredded cheese. Did a second layer the same way and then topped it with more tortillas and sauce. I let it cook for an hour on high due to a time crunch and since everything was already cooked. I would say 3 hours on low would be good. Served with sour cream.

It fed me, DH, and DS, and then I was able to portion out four meals of leftovers with it. Pretty good!

uumm, sounds yummy! Glad it turned out good! I posted a bunch of recipes on your other thread. I have tons more, is there anything specific you are looking for?

Thanks! I saw your post, lots of great ideas. I guess I'm not looking for anything specific, more like new things I haven't done yet. Or things with lots of veggies to really stretch the meat out as far as possible.

Tomorrow night it will be Chicken and Dumplings with lots and lots of veggies.
