Im looking to make a simple as possible and healthy as possible homemade candy with these 2 ingredients being the main ones. Id like to use as few other ingredients and as natural and healthy as possible. So what other ingredients can I use to make these two into a sort of solid, dry mass and what would I need to do? The end result I would like to be a sort of a solid bar that you can hold in your hands (and eat!).

That sounds like an interesting project! Would you want them raw or baked?

Roasted carob powder would add some stiffness. Or melted barley malt-sweetened carob chips; they would firm back up as they cooled. Maybe some unsweetened coconut flakes ground to a very fine powder or even to a cream. Dried fruit soaked in fruit juice or water and blended smooth would add substance too. You probably wouldn't need the xylitol in that case, the fruit would be sweet enough.

Let us know how they turn out!

If you decide to use carob chips, be careful melting them. If you get them too hot, they seem to turn into glass and can't be softened! A double boiler works best for me.

Xylitol is also toxic to dogs so please use care.

I would add some whole oats and melted high-quality chocolate, then put in freezer. I would omit the Xylitol if the chocolate contained a small amount of sugar. Even with a small amount of sugar in the chocolate, the glycemic load would be very low because of the fiber in the whole oats and the fat in the nut butter.
