This is a recipe that I fix a lot in the winter, I love casserole when it is cool outside.
Pork Chops and Hash brown casserole
4 or 5 pork chops
2 pound package frozen hash brown potatoes
1 cup sour cream (I usually use light sour cream)
1 can cream of mushroom soup (you could use cream of celery or cream of chicken if you don't care for mushrooms)
1 cup chopped onion (I cheat and use frozen chopped onions

)
1/2 cup milk
1 cup shredded Cheddar cheese
Preheat oven to 375º F.
Brown chops on both sides in a little oil in a skillet and set aside. In a large bowl, combine sour cream, soup and milk. Add the hash browns and onions and stir. Pour mixture in greased 9X13" baking dish and sprinkle cheese over top. Place the browned pork chops on top.
Bake for 50 minutes or until pork chops are fully cooked.
