Ok, so now I have so many bananas I don't know what to bake. lol
I've made banana bread and plan to make some more.
I am currently trying some banana cookies w/icing.
If you have any good banana recipes to share, add them here. :)

Pineapple Banana Bread
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1/2 cup mashed ripe banana
1/3 cup drained crushed pineapple
1/2 cup flaked coconut
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

In a mixing bowl, cream butter and sugar. Beat in eggs. Stir in banana, pineapple and coconut. Combine dry ingredients; stir into creamed mixture just until combined. Spoon into a greased 8ix 4x 2-in. loaf pan. Bake at 350º for 65-70 minutes or until bread tests done. Cool in pan 10 minutes; remove to a wire rack.

Banana Spice Cake

2 1/2 c. flour
1 2/3 c. white sugar
1 1/4 tsp. baking powder
1 1/4 tsp.baking soda
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 1/2 tsp. cloves
2/3 c. vegetable shortening
2/3 c. buttermilk
1 1/4 c. mashed bananas
2 eggs, unbeaten

Cream sugan and shortening together. Add eggs, beat well. Add remaining dry ingedients together and add to creamed mixture alternately with milk. Add mashed bananas. Bake at 350 degrees for 30-35 minutes.

Sour Cream Banana Cake

2 bananas, mashed
2 eggs, unbeaten
1 c. white sugar
1 c. sour cream
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1 tsp. baking soda

Preheat oven to 325. Mash bananas until no lumps remain. Add unbeaten eggs and mix well. Beat in sugar, cream and vanilla. Mix flour, baking powder and baking soda. Blend in. Bake in 8 inch square pan or 13x9x2 in. baking dish for 35-45 minutes.


3 c. sugar
3 c. water
1 can frozen lemonade
2 cans frozen orange juice
1-48 can pineapple juice
3-5 mashed bananas (4)

How to Prepare:

Bring to boil sugar and water. Mix sugar water into fruit juices and freeze in ice cream pail. When needed scoop into glass. Mix with 7-Up or Gingerale.

I am currently baking some banana muffins. I loved jerseygirls banana bread, so found a similar recipe for muffins. They are baking up now. I'll edit and add how they turn out and the recipe if they are good.

Thanks for the banana recipes. I'm so excited to try some more new ones. I'll be going to the grocery store to pick up a few ingredients tomorrow and will post some results on some of these recipes. :)

***Edited to add*** These muffins are great. A nice and simple recipe to follow and delicious results. These would make a great "muffin top" muffins.
Here's the recipe:

Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 eggs, lightly beaten
1/3 cup butter, melted

1/3 cup packed brown sugar
1/8 cup all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

1 Preheat oven to 375 degrees F (190 degrees C). Lightly
grease 10 muffin cups, or line with muffin papers.

2 In a large bowl, mix together flour, baking soda,
baking powder and salt. In another bowl, beat together
bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3 In a small bowl, mix together brown sugar, flour and
cinnamon. Cut in butter until mixture resembles coarse cornmeal.
Sprinkle topping over muffins.

4 Bake in preheated oven for 18 to 20 minutes, until a
toothpick inserted into center of a muffin comes out clean.

I added some vanilla and cinnamon to the muffin recipe.

Banana Ravioli w/ Vanilla Custard Sauce
3/4 cup finely chopped peeled ripe bananas
1/4 cup (packed) golden brown sugar
1/4 cup graham cracker crumbs
2 Tbls finely chopped walnuts
2 Tbls finely chopped pecans
16 wonton wrappers
1 large egg, beaten to blend
Vegetable oil (for frying)
Powdered sugar (optional)


This recipe originally accompanied Fried Banana
Ravioli with Vanilla Custard Sauce.
2 cups whipping cream
1 vanilla bean, split lengthwise
4 large egg yolks
6 tablespoons sugar

This is a dessert version of classic fried savory
ravioli, dressed up with custard sauce.

Gently mix bananas, brown sugar, graham cracker
crumbs, walnuts and pecans in medium bowl (do not
mash bananas).
Lay wonton wrappers on work surface and brush edges with egg.
Spoon 1 1/2 heaping teaspoons banana filling into center of each
Fold wrappers diagonally over filling.
Press edges to seal.
Place on baking sheet lined with plastic wrap.
(Ravioli can be prepared 6 hours ahead. Cover with plastic and refrigerate.)
Add enough oil to heavy large skillet to reach
depth of 2 inches.
Heat over medium heat to 350°F.
Working in batches, add ravioli; cook until golden brown, about 45 seconds per side.
Using slotted spoon, transfer to paper towels; drain.
Arrange ravioli on serving plate and dust with
powdered sugar, if desired.
Serve with Vanilla Custard Sauce.
Makes 16.


Place whipping cream in heavy medium saucepan.
Scrape in seeds from vanilla bean; add pod.
Bring cream to simmer.
Whisk egg yolks and sugar in medium metal bowl to blend.
Gradually whisk in hot cream mixture.
Return mixture to saucepan and stir over medium-low heat until custard thickens and finger leaves path when drawn across back of spoon, about 4 minutes (do not boil).
Cover and refrigerate custard sauce until cold, about 3 hours.

(Can be prepared 1 day ahead. Keep refrigerated.)

theres a shake you can make with bananas as well..

don't remember the exact measurements but it have milk, bananas, vanilla, and crushed ice..
