My dh makes cream of broccoli soup.
Here's the recipe:
2 tablespoons butter
medium chopped onion
1 chopped celery stalk
3 cups chicken broth (we tend to use boillion paste)
1 head of broccoli (florets)
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
pepper to taste
Directions
1 Melt 2 tablespoons butter in medium sized pot, and saute onion and celery until tender.
2 Add broccoli and broth, cover and simmer. Puree soup and return to heat.
3 In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Whisk continuously until a nice consistency and add it to the broccoli and broth mix. Whisk some more. Add pepper and salt to taste.
Super yummy. Hubby is making it tonight.
You can always add more butter, milk, flour, salt, pepper to get it to the texture that you want. Can add garlic or potatoes too. For a twist, add some velveeta for broccoli and cheese soup.
