This recipe looks good! Haven't tried it yet but seeing as the pumpkins may go on sale tomorrow OR I'll just use butternut squash instead.

Pumpkin Soup
Serves 4-6
Ingredients
* 1 yellow onion
* ¼ cup olive oil
* 4 cups peeled pumpkin, coarsely chopped
* 1 sweet apple, diced
* 1 quart stock or water
* Spices
* Salt
Instructions
In a medium-sized stockpot, heat the olive oil. Add the onions, and sauté until brown, about 5 minutes. Add the pumpkin and apple and sauté for a minute, then add the stock and bring to a boil. Reduce the heat to a simmer, and cook for 20-30 minutes, covered. Stir the soup occasionally.
When the squash and onions are fork tender, the soup is done. Taste and season with spices and salt. Puree in a blender, or mash big chunks of squash with a potato masher. Garnish with a sprinkling of a colorful spice like chili powder or paprika.
