Lean kidney bean hash


Recipe Description
Low fat and full of fiber...Satisfying, filling, and so good
for you!​
Preparation Steps:
Scrub and rinse potatoes-leave skins on.
Boil potatoes until 3/4 done.
Drain well and chill potatoes.
Rough chop or dice potatoes.​
Level of Difficulty:
Easy​
Time Needed:
approx 30 min.​
Ingredients:
* 2 Tablespoons olive oil
* 1 medium onion, chopped
* 1/2 green pepper, chopped
* 1/2 red pepper, chopped
* 2 to 3 boiled potatoes, chilled and diced with skins still on
* 1 15-ounce can kidney beans
* 1/3 cup water
* dash of salt
* dash of pepper
* dash of garlic powder
* dash of Tabasco sauce *optional*
* dash of Mrs. Dash seasoning​
Serves:
2-3​
Directions:
~Heat the olive oil in a large frying pan. Saute the onion until it's soft. Add the green and red peppers and saute briefly.

~Add the diced potatoes and mix well. Cook for 10 minutes, turning with a spatula every 2 minutes.

~While the potato mixture cooks, rinse the beans well to remove the "goo," then mash 1/2 to 2/3 of the beans with a potato masher. Mix the beans into the mixture in the frying pan, add water, and cover. Cook over medium heat for another 5 minutes.

~Season to taste. Serve and enjoy.​

Sounds delish! :) Thanks for posting.

One question - why do the potatoes have to be chilled/cold after boiling before putting into the frying pan?

The potatoes are more firm and stand up to being cooked a bit better when cold...potatoes tend to...not sure of the word...get a bit "mushy" when hot or kinda "melt"...know what I mean...? :ponder:

Mmm...This sounds really good. I think I'll try it with some Sazon and adobo seasoning.
