Lemon Cake Filling


Recipe Description
Tangy flavour, pairs well with Lemony Yellow Pudding Cake. (see other recipe here: http://www.frugalvillage.com/forums/cakes/131125-lemony-yellow-pudding-cake.html)​
Preparation Steps:

10 mins​
Ingredients:
* 3/4c granulated sugar
* 2 tbsp cornstarch
* 1/8tsp salt
* 3/4 cold water
* 2 egg yolks, slightly beaten
* 1 tsp grated lemon peel (zest)
* juice of a med/lg lemon
* 1 tbsp butter or margarine​
Serves:
approx 1 cup of filling​
Directions:
In a small saucepan/pot, combine sugar, cornstarch & salt. Gradually add water and whisk well til fully blended. Whisk in egg yolks, lemon peel/zest & juice.

Cook over medium heat, whisking constantly until thick and bubbly. Boil for 1 minute then remove from heat. Stir in butter/margarine. Cool to room temp without stirring.

Once cooled, use to fill cake/cupcakes.
(or eat it on its own like I did lol)​
