Lemon Dumplings
Recipe Description
Very easy and quick lemon dessert.
It is sweet so if need to, reduce the amount of sugar.

Ingredients:4 x 15 ml spoon (4 tbsp) lemon curd
1 lemon, grated rind and juice
2 x 15 ml spoon (2 tbsp) water
100 g (4 oz) Self Raising Flour
50 g (2 oz) suet
25 g (1 oz) sugar

Directions:1 Mix together lemon curd, lemon juice and water and pour into a casserole dish which has a good fitting lid.
**Cooking requires a microwave, please do not use a metal dish.**
2 Mix - in a seperate bowl - flour, suet, sugar and grated lemon rind with a little cold water to form a soft dough.
3 Divide dough equally into 4 and shape into balls. Place on top of sauce, spoon sauce over dough, cover and cook on FULL power for 3½ minutes 650w (3 minutes 800w).
Serve with Custard or leave plain
