Ahhh! Dh just told me that the stores here are already starting to close for the night and I have no idea if they will be open tomorrow either, so I guess Easter dinner will have to be made with ingredients that I have on hand (thankfully, we're pretty well stocked). But since I might not be able to get any more vegetables (I shop for them daily normally) I need a recipe to do something with canned corn. (not cream-style, just regular kernel corn)

Any suggestions??

We will also be having roasted chicken, potato salad, deviled eggs, and some rolls. Maybe also a green bean bake, but I don't know yet.

Here is a recipe that my kids like that uses corn. The recipe calls for frozen corn, but you could sub canned. The leftovers from this are good heated up for breakfast the next day.

Skillet corn fritters
10 ounces corn. drained save liquid from can.
milk
2 tablespoons butter melted
1/2 cup flour
3/4 teaspoon baking powder
1 teaspoon salt
1/8 teaspoon black pepper
2 eggs beaten
oil or other fat for frying

drain corn in strainer pressing slightly to get all the moisture out.
measure liquid from corn and add milk to make 1/4 cup
mix all ingredients except the oil for frying until blended.
drop by tablespoons into hot oil about 1/2 deep and fry until golden brown on one side turn and brown on other side.
makes enough for about 4-6 servinings

This recipe is easy to double

Sounds yummy, if we don't do that for dinner on Sunday, I'll definitely try it another time!
