Well ladies...............as you all know I will be starting work in the next few weeks and will be getting home kinda late. I think crock pot stuff will be a BIG help round here. So I am looking for your tried and true recipes. I currently make :
enchiladas
chili
roast
few other things but help me out guys!!!!!TIA:)

Lemon Chicken

chicken cut in pieces - with or without bone, doesn't matter
1 small can of lemonade
cook all day
When you get home thicken with corn starch and serve over rice.

My French Dip Sandwich and Pork Chop recipes are in the Community Cookbook.

Another easy one: Take 1-2 lbs boneless spare ribs, add salt and pepper, and cook on low all day. When you get home, drain all the grease, then add a bottle of BBQ sauce. Let them cook another hour or so, and enjoy! The meat literally falls apart... these are really good. You can do the same thing with chicken, although we like ribs better than chicken when cooked this way.

Yes use a small can of frozen lemonade.

Another great recipe is crock pot enchiladas.

Brown hamburger with about half a medium onion chopped.
layer in your crock the following

meat
shredded cheese
refried beans
1 flour tortilla
keep layering until about 2/3 full.

Mix a package of enchilada mix according to package directions then pour over the layers.
Cook on low all day.
Serve with Mexican rice and it is wonderful!

I love to just throw raw meatballs or raw Italian Sausage in the crockpot with a can of pureed tomato. Then at dinner time, just cook the pasta for the sauce and meat.

Cream Cheese Crockpot Chicken (ww)...

Denise, here's a favorite of mine.

Cream Cheese Crockpot Chicken (ww)...Serves 6
Talk about Easy!!!!

1 1/2 pounds frozen uncooked boneless, skinless chicken breasts (or legs)
15 oz canned black beans, drained
15 oz canned yellow corn, drained
16 oz salsa (hot medium or mild)
8 oz Kraft Philadelphia Brand Free Fat-Free Cream Cheese (fat-free, lo-fat or regular)

Put frozen chicken breasts in crockpot, cover with can of black beans, can of corn and jar of salsa. cook on high 4-5 hours or until chicken is cooked. Place block of cream cheese on top and cook for additional 1/2 hr.
Serves 6 @ 5 Points Each

I toss in boneless pork chops and two cans of cream of mushroom soup. Let it cook on low while I'm at work all day. When I get home, I toss in some rice and let it cook until the rice is soft enough to eat, and voila! Dinner is ready!

Garlic Beef Stoganoff

2 tsp. beef granules
1 cup hot water
can of cream of mushroom soup
9 oz. can sliced mushrooms or fresh
1 large onion
3 cloves minced garlic
1 tbls. Worcestershire sauce
1 1/2 lbs. round steak cut into thin slices
2 tbls. oil
8 oz. cream cheese cubed
Hot cooked noodles

In a skillet brown beef in oil. In the slow cooker add water, bouillon, soup, mushrooms, onion, garlic,Worcestershire sauce and browned beef. Cook 7-8 hours on low. Stir in cream cheese until melted. Serve over noodles.

This is not all that pretty to look at when it's done, but the flavor is wonderful.

I made your enchilada recipe yesterday.
I did not have a package of enchilada sauce but did have a can of enchilada sauce. Poured it over it all and it was very good.
I think I will add in some green chilis next time to give it a little more zip.

This is a super easy and fast recipe. Fits great into the small 4 qt crockpot. The tortillas are the right size for it.

Will make again.

Really easily recipe.

Use chicken, pork chops or ribs.

Place sliced onions on the bottom of the crockpot.
Wash and place your choice of meat on top of the
onions. Pour a bottle of your favorite BBQ sauce
all over the meat.

Let it simmer on low for 3 or 4 hours. Or on high
for 2 - 2 1/2 hours depending on how much meat
you put in. Very good!
