1 lb. ground beef
2 tsp. salt *
1 onion, finely chopped
1 Tbsp. prepared yellow mustard
1 Tbsp vinegar
1 Tbsp. sugar
water to cover
salt and pepper to taste

1. Heat fat over medium heat in iron skillet - lightly salt bottom of pan.

2. Break ground beef up with back of wooden spoon (I use potato masher).

3. Add chopped onion while browning meat.

4. Continue to break up meat with spoon (potato masher).

5. Drain fat - return meat to skillet.

6. Add mustard, vinegar, sugar and just enough water to barely cover.

7. Simmer 15 to 20 minutes or until water is cooked out.

8. Serve on warm bun with mustard and dill pickle.

* Be careful off all the salt this recipe calls for - go very lightly on the salt. I usually omit the 2 tsp. salt since I have already sprinkled salt in the pan. I don't normally add more. Do a taste test first.

Hi Maggie! I'm glad you like this one. I hope you enjoy it. I actually have never heard of Maid Rite Loose Meat Sandwich, but googled it after reading your post and found this recipe. Maid-Rite Copycat (Loose Meat Sandwiches) NEW VIDEO I may try it sometime, but I really like the above recipe. I found it by googling "loose meat" after seeing several Rosanne episodes where she had the restaurant and sold loose meat sandwiches. I'd never heard of loose meat before, but found this recipe online and we love it. I hope you enjoy it, too. :) (Edited: I may add low sodium chicken or beef stock instead of the water next time. Sounds good!)

In South Carolina, Sloppy Joe's are a favorite, too. I'll have to try the recipe you shared. You can't go wrong with Taste of Home magazine! :) The LM Sandwich, while also a ground beef sandwich , is a bit different from a SJ. I guess because it doesn't have a tomato base and also the hamburger and mashed until very fine. It has a different texture and flavor to me, but both are delicious IMO. :)

I have made a copy-cat maid-rite sandwich a few times and we love it. I got this recipe from a comment on a blog I follow so the directions are not exact.

1lb ground beef
1 to 1 1/2 c. beef broth
dashes--
worchestershire sauce
liquid smoke
onion powder
minced garlic
pepper

brown ground beef, drain, add remaining ingredients. Simmer until most of liquid gone. Serve on toasted hamburger buns with mustard and pickles.

Interesting. I am another one that grew up with sloppy joe sandwiches (Illinois). I will have to give this one a whirl sometime.

Sloppy joes were always called barbecue when I was growing up. It consisted of ground beef browned with chopped onion and then sauced with a mixture of catsup and mustard, more of the former than the latter. Slap a slice of American cheese or Velveeta on a bun, spoon on the barbecue, top with a couple slices of pickle, and Bob's your uncle.

"maid rite" is a chain in the midwest. They used to cook the loose meat just in the steam table bin on the steam table. There is a "maid rite" in Waterloo Iowa that, until 2 years ago, still got to cook meat that way. The health dept didn't like it but that place had some sort of historic waiver to keep doing it. They also served homemade pie and cinnamon rolls but most of the franchisees don't/can't do that anymore. they cook the meat hotter and buy pies or don't serve pie.
