Mayo

Recipe Description
Dukes Mayo rip off
Preparation Steps:
Level of Difficulty:
Easy
Time Needed:
Ingredients:
1 cup veg oil
1 egg yolk
1/4 tsp salt
1/4 tsp dry mustard
5 tsp white vinegar
Serves:
Directions:
put all but the oil in your food processor bowl and pulse until blended. turn processor to high and then very slowly drizzle in oil.

If you have a Cuisinart it has a drip tube that does this perfectly for you.

All finished product to set at room temp for about 30 min then refridgerate.

Make sure to use pasturized eggs as you arn't cooking them.

I believe for miracle whip you add a tsp of sugar, but as I don't eat miracle whip can't be sure.

Also, instead of measuring out 5 tsp, I use 2 scant TBL.

I have kept it up to a month without problems.

Btw, not to point fingers at all, but the blending issue is usually the operator rather than the recipe when it comes to mayo.

If you do it by hand (which I do NOT recommend) put a few drops (actual drops) of oil into your bowl and then whisk like heck and keep doing so until its going then you can add about a tsp at a time until the entire cup is incorporated.

Again, I honestly believe if you use much mayo a good food processor with a drip tube would pay for itself here
