Microwave Risotto


Recipe Description
I love risotto, but not the standing over the stove and stirring. This is a great recipe that has the microwave do most of the work. Now I can have risotto as a side dish or even an entree whenever I want. Based on a recipe by Barbara Kafka.​
Preparation Steps:
For more flavor from saffron, heat your broth in the microwave prior to starting the recipe, and let the saffron threads steep in it. You can omit the saffron.​

Ingredients:
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chopped onions
1 cup arborio rice
3 -5 saffron strands
salt and pepper
1/4 to 1/2 cup grated parmesan cheese​
Serves:

Directions:
1. Heat butter and oil in a microwave safe pie pan, uncovered, for two minutes on high.
2. Add onion, stir, cook for four minutes on high.
3. Stir in rice to coat, cook four minutes on high.
4. Mix saffron into broth, add to rice, cook on high for nine minutes.
5. Stir and cook on high for nine minutes more.
6. Let the risotto sit for a few minutes, then add the cheese, and salt and pepper to taste. If your broth is salted, taste before adding salt!
7. Microwaves vary in wattage, and you may need to adjust the amount of time up or down.​

I hope you like it - you can also add some veggies to it to make a risotto primavera, or some mushroom (sauteed separately). I love risotto and make it a lot more often when I can do it in the microwave.
