Mixed Sauteed Veggies


Recipe Description
A melange of vegetables that you have a 'onesy' of in your fridge. Served in a tomato-y sauce. This is one of my favorites. It tastes like homemade vegetable soup without the long boiling time.​
Preparation Steps:
Peel and chop any veggies you choose. The more the better!​

Time Needed:
20 minutes​
Ingredients:
Vegetables
Can tomato sauce or diced tomatos
Parsley
Oregano
Salt & Pepper​
Serves:
Depends upon the amount of veggies on-hand.​
Directions:
Saute all of your veggies in a little olive oil or butter until tendercrisp. Start with the ones that take longer to cook like carrots, cabbage and celery. Add the others at your discretion so they all will be approximately the same texture. There will be lots of juice at this stage.

When the veggies are tendercrisp, add a can of tomato sauce or diced tomatos. The size of can depends upon how much veggies you have.

Also add parsley, oregano, salt and pepper to taste. Simmer until the spices start to soften and smell yummy.
