From the South Beach Diet, taste and consistency of mashed potatoes, and very filling too!

1 steamed cauliflower or 1 bag frozen cauliflower

2 tablespoons of lite butter

1/2 cup reduced fat half and half any milk scource will work or imo or onion dip or lite sour cream

garlic powder or pepper and salt

Blend in food processor until creamy, serve hot- great with chicken or steak or plain, also great as a dip with potatoe chips!
