Mushroom Barley Soup (Vegan)
Recipe Description
So rich and decadent! This stuff is good and good for you!
Preparation Steps:Chop onions, celery, garlic, mushrooms, parsley, and carrots.
Level of Difficulty:Easy
Time Needed:3 hours + prep time
Ingredients:2 onions
2 stalks of celery
2-4 cloves of garlic (to taste)
1 lb fresh mushrooms
1/2 cup soy sauce
1 c. barley
1/2 t. salt
1/2 t. garlic powder (or more to taste)
1 t. dill
1 t. fresh parsley
2 carrots
10 c. water
Serves:2 stalks of celery
2-4 cloves of garlic (to taste)
1 lb fresh mushrooms
1/2 cup soy sauce
1 c. barley

1/2 t. garlic powder (or more to taste)

Directions:In a large pot, combine onions, celery, garlic, and mushrooms. Add just a bit of the water so veggies don't stick to pot (or you can add oil if you want to add some more texture).
Saute for approx 4 minutes, then add barley, soy sauce, salt, garlic powder, dill, parsley, and remaining water.
Bring to a boil, then simmer for 2 1/2 hours.
Add carrots and allow to simmer another 45 minutes, or until carrots are tender.
