It turned out really well and we ate it with tortilla chips. (in addition to the corn tortillas baked into the dish)
I sauted the chicken with onion powder, garlic powder, and taco seasoning.
While that was saute I cubed 8 oz of velveeta.
I mixed the cheese, soup, chicken, and enchilada sauce. Cooking the mixture until the cheese is melted.
Layer in 8X8 like this:
Bake at 350* for 25 mins.
