I have 2 that I use all the time (along with some hand me down recipes).

Canning and Preserving by Linda Ferrari. This one I fall back on all the time.

Blue Ribbon Preserves by Linda J. Amendt. Lots of great explainations and helps in this one.

Name some of yours that you faithfully rely on when canning/preserving.

The Kerr Canning Book, you just can't go wrong.
I too like the Ferrari book.
