I have a package of frozen skinless thighs and one of skinless drumsticks. Being that I don't get home from work and getitng my daughter until between 6 and 6:30 I could use a recipe for either that I can put in the crockpot. Something to roast them or something along those lines. I also need a recipe for each one, not both together. Being that there is just two of us (my daughter doesn't eat chicken) I don't want to cook both up at once. TIA!!

Here are two of our favorites:

Easy Teriyaki Chicken

8-10 Chicken legs or thighs
1/2 cup soy sauce
1/2 cup brown sugar
1/2-1 teaspoon garlic depending on your taste
dash or so of hot sauce (if desired)
pinch of ginger

Place chicken in greased slow cooker. In a small bowl, mix other ingredients and pour over chicken. Cook on low for 6-8 hours (8 if you want it falling off the bone). Serve with rice.

Bill's Chicken
Chicken thighs
Soy Sauce
Onion, sliced

Place all in crockpot (chicken doesn't need to be thawed, I never thaw anything for the cp), cook on low 6-8hrs. Shred chicken, serve over rice.

Thank you so much! Those are exactly the type of recipes I was looking for! WE love Teriyaki and it's something I can make and shred the chicken and even use that in wraps later on.

Mexican style

Chicken-
Home Made Salsa or a Jar of salsa
Place chicken in the crockpot.
Cover chicken with salsa.
Cover and cook on low.
You can eat it with rice or shredd it for enchiladas or tacos or tostadas!!
