It's crock pot night here. Black beans and rice and Mexican roast.
We decided to go low key on dinner by making macaroni & tomatoes and a salad. Now we can really get into Happy Hour with wild abandon. :mdance:
grandma said we having both veggies with onion dip, egg rolls, ham cream cheese green onion roll up, pop and chocolates I really am going to need the tread mill

We have a New Year's Open House tomorrow so I am preparing our good luck meal tonight-pork roast, greens, blackeye peas and cheesy potatoes.

Making a pork roast with sauerkraut, au gratin potatoes and a veggie. Will have the left overs tomorrow...tradition is pork and sauerkraut on new years day. Hope I get double good luck in 2012 for having it new year eve and day!

Weeell...I was planning on Beef Stroganoff but about 1/2 hr. ago Mike decides to mention he doesn't think he's "in the mood" for that...bahahahaha!

So it might end up being a frozen pizza!;)

Macaroni & Tomatoes...YEEEUUUM! One of my all-time favorite meals from my childhood.:hurray:
But of course no one else in my house will touch them...Boooo! More for me, I say. :)

{Side note: Growing up we always sprinkled ours with a little bit of sugar.
Not sure why but this was the only time we ever put sugar on anything containing tomatoes.
As an adult, I've heard of folks adding a sprinkle of sugar to pasta sauce to cut down on the acid but I can only ever rem. adding it to macaroni & tomatoes.}

We are doing a number of snack like things to eat. Mini pizzas, cookies, pasta salad, pups in a blanket, and chips and dip.

At this rate, probably just the trail mix I've been munching on all day. Too lazy to make anything. :)
Fried egg sandwiches topped with goat cheese and sautéed spinach. Cheesecake for dessert made with leftover Christmas meal ingredients-- cookie crust with cream cheese, condensed milk, lime juice filling. Tried to make it a treat without having to buy extra ingredients...we'll see how the kids think it tastes!
I didn't really plan anything or buy any junk food.

I made veggie wraps for us. Cucumbers, grape tomatoes, cut up apples, carrots, and romaine.

I might air pop some popcorn later while watching the countdown with Anderson Cooper. :D
