A Taste of the Finger Lakes

Submitted by the Chenango County (NY) Historical Society

Jennie's Chilli Sauce

18 ripe tomatoes, cook one hour then sift through a cullender (collander) pan.

Then add:

1 cup sugar
1 cup vinegar
1 teaspoonful all kinds of spices
1 onion
1 pepper (probably green, not hot)

Cook 2 hours (simmer), then add 1 tablespoon salt. Splendid.

Note: Onion and pepper should be chopped. The sauce was then probably put up in jars, as a way of extending the harvest of vegetables through winter months. The sauce would likely be used as a relish or condiment.

Taken from Scotsman Community Publications, Finger Lakes Vacationer 2003.

Does McCormick make that?

It kind of sounds like one of my recipes.
