Oven Fried Scallops

Preparation Steps:
Preheat oven to 450 degrees

Place the scallops in a small heavy-duty Ziploc baggie. Combine oil & lemon juice; pour over scallops. Seal bag; marinate in refrigerator 30 minutes, turning occasionally​

Time Needed:
30 min marinating time, 10-20 min baking time​
Ingredients:
12 sea scallops (or approx. 48 bay scallops)
2 T. vegetable oil
2 T. lemon juice
1 large egg, lightly beaten
2 T. water
½ cup fine, dry breadcrumbs
½ tsp. salt
Dash of pepper
Dash of paprika
¼ cup butter or margarine, melted​
Serves:

Directions:
Remove scallops from marinade & discard marinade. Combine egg & water; stir well. Combine the breadcrumbs & the next 3 ingredients. Dip each scallop in egg mixture then dredge in breadcrumb mixture. Place in an ungreased 8-inch square pan. Drizzle butter over scallops. Bake at 450 degrees for 15 – 20 minutes or until golden (if using bay scallops adjust time to 10 minutes). Do not overcook or scallops will be tough.​

These would be delicious with crushed Ritz crackers instead of the typical bread crumbs :lip:
