That's one thing I'm always running out of-- I need to seriously stockpile it! :)

I use it in:

-this great ravioli dinner we just tried-- I was amazed that a little bit of evaporated milk made such a difference in the pasta sauce:http://www.recipezaar.com/104636 I really think that little trick has many other possibilities & plan to experiment with it soon!

Hmmmm.... as often as it seems that I'm hunting for a can of it, I can't think of what else I do with it! :confused:

(BTW... I'm not trying to promote the RecipeZaar site or anything, but, that's where most of the recipes I'm thinking of happen to be! Several of my own recipes are there, plus my reviews on ones I've tried-- I'm AmyMCGS there, too.)

I use evaporated milk when I make potato soup too.

I have only used it three or four times in cookie / baking recipes. I think I used sweetened condensed milk more often.

When my kids were little I used to make a really quick, old fashioned cold dessert from evaporated milk.

Take one can of evaporated milk and add one package of jello crystals. Whip them together with an electric beater. Put into the fridge to set. It's a milky wobby jello when set. You can serve it alone or with fruit.

My kids used to love the cherry and strawberry ones I made. :)

I use it in all of my candy/cookie recipes that call for regular milk - it makes a big difference in the taste.

Also, if you mix it half and half with water, it makes an acceptable substitute for whole milk. Perfect when the milk jug is dry first thing in the a.m.

I am going to try this -- it sounds good! Even if my kids turn up their noses, I think my husband would like it. I wonder if it would work with sugar free jello? Its worth a try!
