Recipe Description
Spicy bite-sized cookies​
Preparation Steps:
Dough needs to be chilled one hour.​
Level of Difficulty:
easy​
Time Needed:
1 hour (+ 1 hr chill time)​
Ingredients:
1/3 c. molasses
1/4 c. butter
2 c. all-purpose flour
1/4 c. packed brown sugar
3/4 t. ground cinnamon
1/2 t. baking soda
1/4 t. ground cardamom
1/4 t. ground allspice
1/8 t. pepper
1 beaten egg​
Serves:
240 small cookies​
Directions:
In a large saucepan, combine molasses and butter. Cooker and stir over low heat until butter melts. Remove from heat. Pour mixture into a large bowl and set aside.

In a medium bowl, stir together flour, sugar, cinnamon, baking soda, cardamom, allspice, and pepper. Set aside.

Stir egg into cooled molasses mixture. Gradually add flour mixture until combined. Knead in the last of the flour mixture by hand, if necessary.

Cover and chill 1 hour.

Preheat oven to 350F.

Divide dough into 12 portions. On a lightly floured surface, roll each portion into a 10" rope. Cut rope into 1/2" pieces. Place pieces 1/2" apart on an ungreased shallow baking pan.

Bake about 10 minutes or unitil edges are firm and bottoms are lightly browned. Transfer to paper towels to cool.

Store in an airtight container up to 3 days at room temp or up to 3 months in freezer.​
