Pierogi Casserole

I kind of wing it, so here it is - amounts are approximate:

2 boxes of lasagna noodles cooked
3 cups mashed potatoes
2 onions diced
1 stick butter or margerine
2 cups cheese (cheddar or velveeta - I've even used mozzarella)

Saute diced onions in butter until soft.

I did mine in the crock pot on low for 5 hours - spray crock with Pam. Layer noodles, mashed potatoes, butter and onions cheese. Repeat layers 3 more times ending with cheese.

You can do the same but not use the crock pot - just put it in a casserole and heat in the oven on 350 until the cheese melts and it is heated through.

Great way to use left over mashed potatoes. I didn't have enough milk to make my instant ones today, so I added a frozen bar of cream cheese to the potatoes and it was yummy!

Beware this is NOT lo-cal or low fat! LOL!

Thanks for the recipe Cheryl. I am always up for something new....at least to this family it is new.;) And it sounds easy enough.

omgosh does that ever sound good!!
I'm definitely trying this...I wonder if it would freeze well :curtain:
