Pink Grapefruit Sorbet

Drop red food coloring (optional)
3 - large pink or red grapefruits
1/4 cup light corn syrup
1 cup sugar

With vegetable peeler, remove four 4-inch-long strips peel (about 3/4 inch wide each) from grapefruit, then squeeze 2 cups juice.

In 2-quart saucepan, heat sugar, corn syrup, peel, and 4 cups water until sugar dissolves and syrup boils.

Pour sugar syrup and grapefruit juice through strainer into large bowl. Discard peel and pulp. Stir in drop of food coloring if you like.

Pour juice mixture into 9- by 9-inch metal baking pan; cover with foil. Freeze until partially frozen, about 4 hours, stirring occasionally.

In food processor with knife blade attached, blend sorbet until smooth but still frozen. Return to pan; cover and freeze until almost firm, at least 3 hours.

Just before serving, return mixture to food processor and blend until smooth, above.
