It's got a dial pressure gageMy vintage 16 qt presto canner has a regulator on it. Do I just set it on or screw it down?
It has a dial pressure gage and the weight has open on it so do I screw it down. Down I can hold pressure on but I don't want it to explode. I've always closed it and have canned many times but, am I right? Is the regulator a gauge or a weight? If it's a gauge, that needs to be checked annually for accuracy. You may have to send it to Presto for that. If it's a weight, it just sits on the vent but you will need to know how to get the correct pressure using your canner's weight(s). Some canners use weights with multiple pieces, and some use a solid disc with markings showing which opening in the disc should cover the vent.
You will need your canner's model # (check bottom) but many instruction manuals are available online. It's important to have the proper instructions, especially if you haven't used that particular canner before.
Also be sure to buy a copy of the latest version of the Ball Blue Book so you get the latest info regarding safe canning methods. Don't use old, unsafe methods!
Good luck! Canning is a very satisfying endeavor. 🙂
